What's Cooking | August Newsletter
Hi Reader,
Peak summer is here in the Finger Lakes and I'm doing my best to eat as many peaches, tomatoes, and corn as possible. In this newsletter you'll find my favorite recipes for making the most of this bountiful time of year, and stay tuned for two new recipes dropping later this month.
And I’m excited to share with you one of my go-to low-effort dinners—simple to make yet packed with flavor, it’s a lifesaver on those busy evenings. Along with that, you’ll find a roundup of some of my current favorite life pleasures, from blueberries to astrophysics.
Best,
Sammy

Pesto Pasta with Walnuts and Tomatoes
Get dinner on the table quick with this 15 minute recipe
1 lb dried pasta (I like a short shape with nooks and crannies)
1 c reserved pasta water
1 c walnuts
1/2 c pesto
1/2 c slice sun-dried tomatoes OR 2 large tomatoes
For fresh tomatoes- salt, pepper, olive oil, and balsamic vinegar to taste
Start off getting the water for pasta boiling and cook pasta according to the packaging's directions; drain while reserving 1 cup of pasta water.
Meanwhile toast walnuts until golden brown, set aside.
Combine pasta, pesto, pasta, water, walnuts, and sun-dried tomatoes if using. If using fresh tomatoes, dice 2 large tomatoes and season to taste with salt, pepper, olive oil, and balsamic; and serve along side the pasta.

Recent Life Pleasures
Books. Last month Bryan got a sudden spark of interest in astrophysics and has pulled me into it too! Did you know that we can't directly see black holes because their gravitational forces are so strong that light can't escape them? We listened to a few astrophysics audiobooks on a recent road trip to Maine, our favorite being Brief Answers to the Big Questions by Stephen Hawking. Its a very accessible book, and though we could by no means follow everything, we both came out of it with more appreciation and understanding of the universe and our place in it.
Summer Produce. It doesn't get better than cooking with the summer bounty coming out of my garden and local farms right now. Some of my highlights of this summer of cooking have been blueberry ice cream, pesto, no-cook tomato sauce, summer borscht, and blueberry corn salsa! And with some cooler weather here I'm turning the oven back on and making lemon blueberry cupcakes this weekend!
Art. My art tends to slow down every summer, as I'm more focused on the garden, but a recent trip to Maine provided lots of sketchbook inspiration!
