April Cravings

Bagels. I followed Claire Saffitz's guide to making bagels and they turned out great! I used spices I already had on hand for the toppings- everything mix, poppy seeds, and black sesame seeds. Next I want to make my favorite bagel- jalapeño cheddar!

Lemongrass Tempeh. My favorite way to cook tempeh- crumbled tempeh stir-fried with lots of lemongrass, garlic, and shallots and then coated in soy and chili garlic sauce. Recipe from Andrea Nguyen's Vietnamese Food Any Day.⁣

Greek Turkey Meatballs. A few weeks ago I made Smitten Kitchen's turkey pesto meatballs and have been on a weeknight meatball kick ever since. My own Greek-inspired version featured lots of dill and lemon zest, and I served them over lemon spinach orzo with pickled red onions, sliced cucumber, pickled watermelon radishes, and a garlic-dill yogurt sauce.

Soft Scrambled Eggs with Ramps. Ramps grow abundantly in the state forest near my house and ramp foraging is always the highlight of my spring. This year I've been craving them sautéed in a bit of butter and served with soft scrambled eggs. Simple but perfect.

Oven-Baked Sesame Tofu. I served this as part of a Vietnamese-inspired vermicelli noodle bowl with watermelon radishes, carrots, cucumber, sprouts, lots of fresh herbs, and a tangy nuoc cham sauce.
